Times, they are a’changin’ at Roy Street Coffee and Tea. If you’re a regular or have been in to see us in the last few months, you will have noticed subtle shifts in the bar layout and attitudes of the baristas. Here are some highlights of what we have been accomplishing and what we have in store for you.
In order to provide our customers with the best possible coffee experience for their preferences, we are stocking fewer coffees so that we can concentrate our efforts on delivering more comprehensive understanding for every coffee we offer. With fewer coffees to focus on, we can more easily convey an accurate picture of the flavor profiles and ideal brewing method for each while maintaining a wide variety to choose from.
- Refocus on Espresso Preparation and Training
We’ve learned a lot about coffee since we opened and, with the help of some fresh perspectives and knowledge bases, have been taking some time to condense our preparation to the most useful and efficient practices. Espresso is a dynamic brewing method that requires constant vigilance to maintain the quality you expect from the finest establishments. In order to bring you that quality day in and day out, we have been taking a step back to look at our performance and raise the bar by trimming fat and tightening screws wherever we can.
We have switched the position of the espresso machine and grinders and added a milk pitcher rinser at the milk steaming station in order to improve work flow from the register to the hand-off bar. Now, instead of the grinders being between the barista pouring the drink and handing it to the customer, the barista pulling shots can take an order, pull the shot, and hand it to the barista steaming the milk. Then the milk barista can pour the drink, immediately hand it off on the bar, and rinse their pitcher without ever having to leave their space. This saves us the energy of having to run all over the place to get drinks out and takes a lot less time so you don’t have to wait as long. It also makes latte art pours more visible so you can enjoy the art form that goes into preparing your espresso beverage. This may be a bit difficult to read but you’ll see what we mean when you come in. Here’s a picture to help:
